X – BLANC – The Essence of Purity and Precision
Winemaking: The ecological cultivate grapes for X-BLANC are hand-harvested several times at optimal ripeness, ensuring the highest quality fruit for the blend. The winemaking process begins with gentle pressing to extract the juice, avoiding extended skin contact to preserve the fresh and bright character of the wine. The fermentation takes place under controlled temperatures to preserve the aromatic freshness and balance of the wine.
Following fermentation, the wine undergoes maturation in used 750 liter oak barrels for 9 months. The use of neutral oak allows the wine to absorb texture and subtle nuances from the wood, enhancing its mouthfeel without introducing overpowering oak flavors. This barrel-aging process is essential for the integration of the fruit and oak, and allows the wine to develop a soft, round texture while maintaining its fresh, fruit-driven profile. There is no malolactic fermentation, ensuring the wine retains its lively acidity and crispness. Bottling with a minimal addition of sulphur.
Appearance: Pale golden-yellow with brilliant clarity and a slight viscosity, suggesting a well-structured and layered white wine. Delicate traces of CO₂ may appear, adding vibrancy and energy to the wine.
Nose: Elegant and layered, revealing aromas of ripe fruits such as passion fruit, melon, green nettlespear, white peach and subtly complemented by tropical hints of pineapple and mango. Floral notes of acacia and verbena add freshness, while gentle undertones of spice provide depth. The oak influence is finely integrated, offering nuance rather than dominance.
Palate: Medium-bodied and beautifully textured, with a harmonious balance between ripe fruit flavors and vibrant acidity. The wine unfolds with layers of citrus, stone fruit, and a touch of minerality, reflecting the quartz-rich soils of the region. A delicate phenolic grip adds structure and intrigue, enhancing the wine’s persistence. The oak aging contributes to a refined mouthfeel without overshadowing the purity of the fruit.
Finish: Long and precise, with lingering notes of citrus zest, white flowers, and a subtle saline quality that underscores its terroir-driven identity.
Conclusion: X-BLANC is a refined and expressive Sauvignon blanc that balances freshness, depth, and a subtle mineral backbone. The restrained oak influence enhances texture without overwhelming the wine’s vibrant fruit profile, making it a versatile and sophisticated choice.

X-BLEND – A Dialogue Between Two Noble Varieties
At M–enostavno dobra vina, every wine we craft tells a story of harmony between nature, tradition, and human touch. Our X-BLEND, a refined marriage of 69% Chardonnay and 31% Sauvignon Blanc, was born from the desire to showcase how two distinctive personalities can unite into a wine of remarkable balance and character.
The vineyards rest at the meeting point of the Alpine world and the Pannonian plains, where mineral-rich soils, generous sunlight, and cool mountain breezes shape the essence of our grapes. Guided by our commitment to organic and sustainable viticulture, we allow biodiversity to flourish and vines to thrive naturally, ensuring that every cluster carries the true imprint of its terroir.
Elegance, Depth, and Freshness in Harmony
Chardonnay, the cornerstone of this blend, contributes its hallmark richness, creamy texture, and notes of ripe stone fruit, while Sauvignon Blanc brings a vibrant tension—expressive aromas of citrus, elderflower, and gooseberry, lifted by crisp acidity. Together, they create a symphony of contrasts: depth and freshness, roundness and precision, softness and energy.
On the nose, the wine reveals layers of white peach, melon, and grapefruit, interlaced with delicate floral and mineral notes. The palate unfolds with a graceful balance of fruit and structure—creamy mid-palate, carried by lively acidity, leading into a long, mineral-driven finish. X-BLEND is at once generous and refined, a wine that captures both power and elegance.
A Versatile Partner to Gastronomy
The duality of X-BLEND makes it an exceptional companion to fine cuisine. Its texture and weight pair beautifully with roasted poultry, creamy pasta, or veal dishes, while its freshness and aromatic lift complement grilled fish, shellfish, and seasonal vegetables. Whether as the centerpiece of a festive meal or a quiet evening indulgence, it elevates the dining experience with its layered sophistication.
Crafted with Purpose, Rooted in Authenticity
For us, blending is not only a technique but also a philosophy—a search for equilibrium and expression. Each bottle of X-BLEND is a testament to our pursuit of purity and excellence, shaped by respect for tradition and guided by nature’s rhythm.
With every sip, we invite you to experience the dialogue between two noble grape varieties, the character of our land, and the vision that defines M–enostavno dobra vina.

GREEN – A Pure and Untamed Expression
Winemaking & Terroir: Crafted from organically cultivated grapes, Green is a testament to patience, precision, and respect for nature. The vineyards, rooted in silicate- and quartz-rich soils, benefit from a balance of warm days and cool nights, ensuring slow, even ripening. This unique terroir imparts a distinct mineral tension and structure to the wine, allowing it to fully express its origin.
Hand-harvested and meticulously sorted in the vineyard, the Sylvaner grapes undergo a labor-intensive destemming by hand, ensuring only the best fruit makes it into the final expression. A remarkable 69-day maceration on the skins follows, allowing for complete extraction of phenolic compounds, natural antioxidants, and the full spectrum of flavors. Fermentation occurs spontaneously with indigenous yeasts, embracing the untamed complexity of the grape and its environment.
Following fermentation, the wine undergoes mild pressing before resting for 18 months in 500L barrels. During this period, malolactic fermentation naturally unfolds, lending the wine its characteristic roundness and depth. It remains on its own lees without racking, developing texture and complexity through prolonged contact with its natural deposits. No corrections, no unnecessary interventions—only time and patience shape its evolution.
Bottled in April, Green continued to mature in the cellar for another twelve months, allowing its structure and aromas to harmonize. It is released unfiltered, unfined, with only a minimal addition of sulfur, ensuring the purest possible expression of its raw, living character.
Appearance: A deep golden hue with a slight haze, a result of its long maceration and unfiltered nature. Viscous and structured, it moves deliberately in the glass, hinting at its depth and complexity.
Nose: Wild and layered, with evolving aromas of dried apricot, orange peel, and ripe pear, interwoven with herbal undertones of chamomile, wild thyme, and crushed fennel. Delicate oxidative notes bring hints of almond and beeswax, while the unmistakable minerality of silicate and quartz soils adds a flinty, earthy dimension.
Palate: Expansive and textural, with a finely woven tannic structure from extended skin contact. The interplay of stone fruit, citrus peel, and savory elements creates depth, while the influence of malolactic fermentation introduces a gentle creaminess that rounds out its vibrant acidity. A backbone of minerality runs through the wine, reflecting the rocky soils from which it was born.
Finish: Long and thought-provoking, with lingering impressions of dried citrus, crushed stone, and a subtle saline quality that reinforces its connection to the land.
Conclusion: Green is a wine that challenges convention—raw, structured, and deeply expressive. Guided by traditional techniques and minimal intervention, it captures the essence of its vineyard with honesty and precision. Unfiltered, unfined, and aged with patience, it stands as a testament to the power of time, terroir, and nature’s unrestrained beauty.

YELLOW – A Profound Expression of Time and Terroir
Winemaking & Terroir: Yellow is a wine born from patience and precision, shaped by the extreme conditions of its vineyard. The grapes come from organically cultivated vines rooted in silicate- and quartz-rich soils, where deep mineral deposits and shifting temperatures create an intense yet balanced expression of fruit. These well-drained, nutrient-poor soils push the vines to work harder, yielding grapes of remarkable concentration, natural acidity, and structure.
Hand-harvested at peak ripeness, the grapes undergo meticulous sorting to ensure only the finest fruit is selected. The winemaking process is driven by tradition and intuition, allowing the wine to unfold at its own pace. Destemming by hand is followed by an extended 69-day maceration on the skins, extracting complex tannins, natural antioxidants, and the full depth of flavor locked within the grape skins. Spontaneous fermentation occurs with indigenous yeasts, embracing the individuality of each vintage.
After fermentation, the wine is gently transferred into 500L oak barrels, where it matures for 18 months. During this time, malolactic fermentation naturally occurs, lending depth, roundness, and a seamless integration of structure and acidity. The wine remains on its fine lees without racking, allowing for maximum textural development and complexity. No additives, no corrections—just time and patience guiding the wine to its fullest potential.
Bottled in April, Yellow continued to mature in the cellar for another twelve months, allowing its intricate layers to harmonize before release. It is bottled unfiltered, unfined, with only a minimal addition of sulfur, preserving its raw integrity and evolving character.
Appearance: A deep amber-gold hue, luminous and unfiltered, with a naturally rich viscosity. The color hints at its extended maceration and oxidative complexity, promising depth and structure.
Nose: Opulent yet refined, revealing aromas of dried apricot, ripe quince, and candied citrus peel, intertwined with delicate floral notes of chamomile and honeysuckle. Subtle oxidative influences introduce hints of roasted nuts, beeswax, and saffron, while the unmistakable minerality of silicate and quartz soils provides a grounding, earthy depth.
Palate: Structured and multi-dimensional, with a finely woven tannic grip from its extended skin contact. Layers of baked apple, orange zest, and stone fruit unfold against a backdrop of savory elements—dried herbs, crushed almonds, and a whisper of spice. The malolactic fermentation imparts a creamy, textural elegance, while the wine’s natural acidity keeps it vibrant and precise. A strong mineral presence reinforces its terroir-driven identity.
Finish: Long and resonant, with lingering notes of dried citrus, salted caramel, and wet stone. A wine that evolves with every sip, leaving a lasting impression of depth and authenticity.
Conclusion: Yellow is a wine of contemplation—bold, structured, and unapologetically expressive. Crafted through time-honored techniques and minimal intervention, it speaks to the raw power of its terroir and the patient hands that guide it. Aged to perfection, unfiltered and alive, Yellow is a testament to the art of slow winemaking and the profound connection between soil, fruit, and time.

Layers of papaya, passion fruit and cut grass are complemented by hints of fresh brioche, seamlessly integrated with the wine’s natural minerality. The texture, enhanced by malolactic fermentation, is both polished and persistent, with a finely woven acidity that ensures vibrancy and longevity.
Finish: Elegant and enduring, with lingering notes of citrus zest, crushed stone, and a subtle saline edge—an unmistakable imprint of its terroir.
Conclusion: Extrem is an uncompromising expression of nature’s extremes, where minimal intervention winemaking meets a vineyard of raw intensity. The balance of richness and vibrancy, depth and precision, makes it a wine of both power and refinement—one that speaks eloquently of its origin and the dedication behind its creation.
