The vineyards lie on elevated slopes where cooler nights preserve acidity and aromatic definition.
Unlike typical Sauvignon Blanc regions dominated by limestone or marl, Pohorje offers rare silicate soils in which quartz, granite, tonalite and slate prevail.

WINEMAKING
Minimal intervention. Maximum precision.
EXTREM has never chased approval.
Early on, its character puzzled some — too structured, too restrained, too uncompromising.
But like all wines built for the long horizon, its truth lay ahead, not in the moment of release.
The cellar philosophy is based on restraint.
Fermentation and élevage are guided with a light hand. Extraction is measured. Oak is present, but never dominant — a frame, not a signature.
The wine spends the time it needs, not the time that is convenient.
